01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Heat a skillet over medium heat. Add ground beef, season with salt, pepper, garlic powder, and Italian herbs. Sauté until fully browned, about 5 minutes. Drain excess fat and let cool slightly.
03 - Roll out the pizza dough onto a lightly floured surface to a 12 x 10-inch rectangle.
04 - Spread pizza sauce evenly over the dough, leaving a 3/4-inch border. Evenly scatter cooked beef, arrange pepperoni slices over the top, then sprinkle with mozzarella and Parmesan cheese.
05 - Starting on a long side, roll the dough tightly into a log. Pinch the seam to seal. Using a sharp knife, cut the log into 8 equal pieces.
06 - Arrange the roll ups cut side up on the parchment-lined baking sheet. Brush the tops with olive oil.
07 - Bake in the preheated oven for 12 to 15 minutes, until golden brown and cheese is bubbly.
08 - Cool for 3 minutes before serving. Garnish with chopped fresh basil or parsley, if desired. Serve warm with additional pizza sauce for dipping.
